In view of the constant global warming, even in the 'cool climate' regions it is gradually becoming a challenge to be able to produce ice wine, especially from the Riesling grape variety.
The problem is not the urgently needed botrytis fungus, but rather the paradoxical health of the vineyard at the harvest date of at least -7°C. It is equally difficult to maintain a quantity that is not already minimized by bird predation and infected with other pathogens.
Therefore, we are extremely proud to present a 2021 Riesling Eiswein from the Forster Stift.
On 23.12.2021 at -7.2 ° C, the entire team Bassermann-Jordan from all areas from storage to vinotheque to distribution was asked to the ice wine harvest outside. The now noble rotten Botrytis grapes were vigorously harvested in filigree detail and persistent Sisyphean work.
The special grapes were then pressed in a gentle process lasting several days and slowly fermented in a stainless steel vat.
With an inimitable freshness that can only be transported by the acidity of a Riesling, this wine creates an extraordinarily exciting ice wine.
Intense straw yellow in the glass, we find in the nose the botrytis typical aromas of the harvest of sweet wine. Sweetly mild of honey, ripe apple notes and light herbal notes, as well as a bouquet of candied fruit that creates itself, we have an exciting combination in the nose right from the start.
In the mouth, a building variety of flavors emerges that steadily evolves as we drink. A viscosity settling on the tongue reveals candied ginger and lemongrass at the same time. With exotic spiciness of lemon thyme and pineapple sage that simultaneously leaves an expressive structure in the mouth with a creamy note of white nougat and toffee, an expressive finish with a lot of reverberation is formed.
This ice wine has an incredible aging potential and will be outstanding for several decades to come.
