Salwey

Salwey. Always dry. Always Pinot. In some ways, estate Salwey in Oberrotweil is a classic, family-run operation — yet in others it is anything but. Konrad Salwey is the third generation from the family to run the winery, which focuses on the Pinot varieties traditional to the Kaiserstuhl region: Grauburgunder, Weißburgunder and Spätburgunder. Salwey is renowned for his open-mindedness, his daring to experiment and learn from successes and noble attempts — all in the interest of improving the winemaking process. His grand passion however is and remains Grauburgunder, the estate's flagship varietal. The wines are always fully fermented and shaped by the vineyards' loess and weathered volcanic soils. In the cellar, nature is provided with plenty of time and space, although little is left to chance. This means strict standards in the vineyards, with a 100% selective hard harvest and wild yeast fermentation in large wooden barrels. A hands-off approach in the cellar means the wines are neither fined nor filtered. All in keeping to the motto: As little as possible and as much as is needed.
